The "ping time" (named after the naval sonar "ping") is the time it takes one data packet to travel from one computer to another computer and back again. The higher the ping time the longer it takes a game server and client to communicate with one another and introduces lag into a game. Some game servers will automatically disconnect players with high ping times so other players aren't negatively impacted, one player with an excessively high ping can make a game laggy for all players.
The ping time is most affected by distance, general network congestion, and server load. Even a fast internet connection will have a high ping time to a server on the other side of the world.
