Autumn forest, beach, glacier, medium biomes, standard lighting, normal passage of time, always day, red sky, white clouds, crystals, glowstone crystals, standard terrain, eternal day, normal time, no weather. I don't remember what color I set the fog to, and the descriptive book disappeared in an inventory glitch quite some time ago.

I did and still got an extra thing or two on there each time. Like the main world have used on our server I set everything and it added strongholds and a second weather descriptor on there in addition to the one I set (which was no weather - so it did nothing but still added it), which i didn't.

If it added extra symbols, you forgot something, whether you realize it or not. It's not random. If you do everything right, the world will be stable. Without seeing the book (or the list of symbols entered), I can't tell you what, and it's impossible to simply look at the book and say after the fact, because things are added.
