Mobs means? In traditional game programming, it would refer to the animals, aquatic, hostiles, vanillas; essentially every... npc critter.

Seems likely that here is it meaning hostile type monsters and animals?

Given that they define "animals" and "mobs" - I imagine they mean "mobs" to be hostile monster-type mobs (vanilla monsters plus ogres etc.), and "animals" to be the animals (probably hostile and passive animals, like sheep, lions etc.)

I know in the config they refer to those zombie/bat etc. horses as "horsemobs"....

That is one thing I hate about pretty much all forum softwares (and chat programs), why do they recognize something like rake as a smiley? Why in the name of all that is holy can they not code it so there is a whitespace required after a smiley before it's seen as a smiley???

You should see all the mangled C++ code I have pasted and read
