Maybe because when it comes to carbon based life, we already have some vague idea of what to look for. As opposed to just randomly looking for whatever and hoping we stumble across something.

That periodic table is huge, just sayin'.
Probably because carbon is the only element we know that's capable of forming the kind of complex molecular bonds that allow for more than just a small number of fairly simple molecules to be built from it.
