Default Can someone explain this simply for me?

There is a lot of redstone wiring, I get that. A lot of and/or gates - all cool. Repeaters - got it.

But tell me how that trip wire, dispenser and piston can detect the correct block was used for payment?

There is a link to the 'world' in that youtube. Since when could tripwires be used to sort blocks?

I am not certain I know how it works, but I assume that the blocks must have differing weights

From looking at these videos, it places blocks of various substances at the end of various streams of water such that they are pressed up against a wall. Another stream of water intercepts that block such that any block "paid" by the player will come floating down the stream. If it matches the block against the wall, then it too stops. Otherwise, it continues down the stream.

Using pressure pads or tripwires, the type of block is registered and hence the payment is accepted or denied.

That's pretty much it. The water runs the 'payment' past one or two (or more) stacks (a stack of one item). If the payment is the same type, it will stack with that and it's journey stops. You can detect the absense of movement (using plates or tripwire) and then determine which stack the payment joined with. From that, you can fire different redstone wire to do different things - in this case, dispense whatever item was bought.
