One of my favourite platform games was Superfrog (on the Amiga).

Super Metriod (SNES). Tops in my book. Very well done for a platformer.
Super Mario World (SNES). The best of the classic 2D Mario series, I think.

I'd even have to throw in...

Blaster Master (NES). - Damn tough game. "...Since Blaster Master on NES does not feature a battery or password save system, the entire game must be completed in a single play-through...." -AllGame Synopsis by Scott Alan Marriott

One of the first I got into was Burgertime on the Intellivision !!! Classic game.

Rocket Knight Adventures on Megadrive and
Castlevania: Symphony of the Night on PS1.

Awesome soundtracks, tons of bosses.

They are still awesome.

Super Metroid on SNES or Sonic 1 on MegaDrive for me

Tho there was a game called 'Fury of the Furries' on the Amiga that I used to play a LOT - it was more puzzle than platform though...

The Lost Vikings

There's a couple more, I'll update my post soon after contemplating which were the best

Flashback / Another World. There is an iOS and Android version of AW out there as well apparently.

A close second would be the great ape himself, Donkey Kong.
